- Pull Your Espresso Shot: Pull a 'ristretto' shot, which is a restricted shot using the same amount of coffee but half the water. Dose 18-20g of finely ground coffee, tamp, and extract about 1-1.5 ounces of espresso in 15-20 seconds.
- Steam the Milk: Create a velvety microfoam with no large bubbles. Use 4-5 ounces of cold, whole milk. Incorporate a small amount of air, then spin the milk into a glossy vortex, heating it to 130-140°F (55-60°C).
- The Pour: To integrate the milk and espresso, groom the milk by tapping and swirling the pitcher. Start pouring from a height, then lower the pitcher to create a simple design on the surface.
